Shendetlie: Albanian Honey and Walnut Semolina Cake
Shendetlie is a cherished Albanian semolina cake, generously infused with honey and walnuts. This dessert presents a wonderful harmony of earthy nuttiness and sweet, syrupy goodness, making it an ideal treat for any family gathering or special occasion.
Let's cook.
Preheat your oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
In a large bowl, whisk together the semolina, flour, granulated sugar, and baking powder.
In a separate bowl, whisk the melted butter, yogurt, and eggs until well combined. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped walnuts.
Pour the batter into the prepared baking pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
While the cake bakes, prepare the syrup. In a small saucepan, combine the water and honey. Bring to a simmer over medium heat, stirring until the honey is fully dissolved. Remove from heat.
Once the cake is out of the oven, immediately pour the warm honey syrup evenly over the hot cake. The cake will absorb the syrup as it cools.
Let the cake cool completely in the pan before slicing and serving. This allows the syrup to fully penetrate and moisten the cake.
