Albanian Honey and Walnut Semolina Cake (Revani)

This traditional Albanian Revani is a moist and sweet semolina cake soaked in a fragrant honey syrup. It's a delightful dessert, perfect for sharing with family and friends.

✎
HOW TO MAKE IT

Let's cook.

01

Preheat your oven to 350°F (175°C). Lightly grease a 9x9 inch baking dish.

02

In a large bowl, whisk together the semolina, flour, sugar, baking powder, and vanilla extract.

03

In a separate bowl, whisk the yogurt, vegetable oil, and eggs until well combined. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.

04

Pour the batter into the prepared baking dish and spread evenly. Bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

05

While the cake bakes, prepare the syrup: In a small saucepan, combine the water, honey, and lemon juice. Bring to a boil over medium heat, then reduce heat to low and simmer for 5 minutes. Remove from heat and let cool slightly.

06

Once the cake is out of the oven, immediately pour the warm syrup evenly over the hot cake. The cake will absorb the syrup as it cools.

07

Sprinkle the chopped walnuts over the top of the cake. Let the cake cool completely before slicing and serving.

Chef's Tips

For an extra fragrant syrup, add a cinnamon stick or a few orange peel strips to the syrup while it simmers, removing them before pouring over the cake. Ensure the cake is hot and the syrup is warm (not boiling hot) for optimal absorption.

Easy Substitutions

You can substitute almond extract for vanilla extract for a different flavor profile. If you don't have walnuts, chopped pistachios or almonds make a great topping. For the syrup, you can use all sugar instead of honey, adjusting to taste.
▱

Storage & Reheating

Store leftover Revani in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days. The cake tends to become even more moist and flavorful the next day.
