Sweet Albanian Semolina Halva with Honey and Walnuts

In a medium saucepan, combine the sugar and water. Bring to a boil over medium-high heat, stirring until the sugar dissolves completely. Remove from heat and stir in the honey and vanilla extract. Set aside.
In a large, heavy-bottomed skillet or pot, melt the butter over medium heat. Add the semolina and cook, stirring constantly, for 10-12 minutes, until the semolina turns a golden brown color and smells nutty.
Carefully and slowly pour the warm sugar syrup into the semolina mixture, stirring continuously to prevent lumps. The mixture will bubble vigorously.
Reduce the heat to low and continue to stir for 5-7 minutes, until the semolina absorbs all the liquid and thickens to a pudding-like consistency.
Stir in the chopped walnuts. Remove from heat.
Press the halva into a shallow dish or mold. Let it cool for at least 30 minutes at room temperature, or chill in the refrigerator for firmer slices.
Cut into squares or diamonds and garnish with additional chopped walnuts before serving.
