Quick Salmon & Avocado Rice Bowl
Craft a delightful and nutritious meal in under 30 minutes with this salmon and avocado rice bowl. Featuring perfectly cooked salmon, creamy avocado, and a zesty soy-ginger dressing, it's an ideal choice for a satisfying lunch or light dinner.
Let's cook.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Pat salmon fillets dry with a paper towel. Drizzle with olive oil, then season with salt and black pepper.
Place salmon on the prepared baking sheet and bake for 12-15 minutes, or until cooked through and flaky.
While salmon bakes, prepare the dressing: In a small bowl, whisk together soy sauce, grated ginger, and sesame oil.
Divide the cooked white rice between two bowls. Top each with a baked salmon fillet and half of the sliced avocado.
Drizzle the soy-ginger dressing over the salmon and avocado. Garnish with sesame seeds before serving.
