Japanese Chicken Katsu Sandwich

This Japanese Chicken Katsu Sandwich recipe features crispy fried chicken cutlets nestled between soft bread with a tangy sauce and shredded cabbage. It's a satisfying and flavorful lunch option that's easy to prepare at home.

✎
HOW TO MAKE IT

Let's cook.

01

Season the pounded chicken thighs with 1/4 teaspoon salt and 1/8 teaspoon black pepper.

02

Set up a breading station: place flour in one shallow dish, beaten egg in a second, and panko breadcrumbs in a third. Dredge each chicken thigh first in flour, shaking off excess, then dip in egg, and finally coat thoroughly with panko.

03

Heat 2 cups vegetable oil in a large skillet over medium-high heat until it reaches 350°F/175°C. Carefully place the breaded chicken thighs into the hot oil.

04

Fry the chicken for 3-4 minutes per side, or until golden brown and cooked through to an internal temperature of 165°F/74°C. Remove chicken from oil and place on a wire rack to drain excess oil.

05

Lightly toast the shokupan slices if desired. Spread tonkatsu sauce generously on two slices of bread.

06

Place a fried chicken katsu cutlet on one sauced bread slice, top with shredded cabbage, and then cover with the other bread slice. Repeat for the second sandwich.

07

Cut each sandwich in half and serve immediately.

Chef's Tips

For extra crispiness, ensure your oil is at the correct temperature before frying. Do not overcrowd the pan, as this can lower the oil temperature and result in soggy katsu. You can also lightly butter and toast the bread for added flavor and texture.

Easy Substitutions

Chicken breast can be used instead of thighs, but pound it thinner for even cooking. If shokupan is unavailable, any soft white bread will work. Mayonnaise mixed with a dash of Worcestershire sauce can be a quick substitute for tonkatsu sauce.
▱

Storage & Reheating

Best enjoyed fresh. Leftover chicken katsu can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in a toaster oven or air fryer for best results to maintain crispiness.
