HOW TO MAKE IT

Cook the egg noodles according to package directions until al dente. Drain well and set aside.

While noodles cook, prepare the ginger and scallions. Finely julienne the ginger and thinly slice the scallions, separating the white and green parts.

In a small heatproof bowl, combine the julienned ginger, white parts of the scallions, light soy sauce, sesame oil, sugar, and salt.

Heat the neutral oil in a small saucepan or skillet over medium-high heat until shimmering and just starting to smoke, about 2-3 minutes.

Carefully pour the hot oil over the ginger and scallion mixture in the bowl. It will sizzle vigorously. Stir immediately to combine.

Add the drained noodles to the bowl with the ginger scallion oil. Toss thoroughly to coat all the noodles evenly.
