HOW TO MAKE IT

In a medium bowl, combine the minced lemongrass, minced garlic, fish sauce, soy sauce, brown sugar, and 1 tablespoon of vegetable oil. Mix well to create the marinade.

Add the chicken pieces to the marinade, ensuring all pieces are well coated. Cover the bowl and refrigerate for at least 15 minutes, or up to 30 minutes for deeper flavor.

Thread the marinated chicken onto the soaked bamboo skewers, about 4-5 pieces per skewer.

Preheat a grill or grill pan to medium-high heat. Lightly brush the grill grates with vegetable oil to prevent sticking.

Place the chicken skewers on the preheated grill. Cook for 3-4 minutes per side, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F (74°C).
