Albanian Yogurt and Cornmeal Porridge (Harapash)

This traditional Albanian breakfast porridge, known as Harapash, offers a unique savory start to your day. Made with cornmeal and yogurt, it's a comforting and hearty dish that's simple to prepare.

✎
HOW TO MAKE IT

Let's cook.

01

In a medium saucepan, bring 1 cup of water to a boil over medium-high heat.

02

Once boiling, slowly whisk in the 1/2 cup of fine cornmeal and 1/2 teaspoon of salt, stirring constantly to prevent lumps.

03

Reduce heat to low and continue to cook, stirring frequently, for 10-12 minutes, or until the cornmeal has thickened into a smooth porridge consistency.

04

Remove the saucepan from the heat and stir in the 1 cup of plain yogurt until well combined.

05

In a small skillet, melt the 2 tablespoons of butter over medium heat until it begins to foam and turn slightly golden brown, about 2-3 minutes.

06

Divide the Harapash into two serving bowls.

07

Drizzle the melted butter over each serving and sprinkle with 1/4 teaspoon of paprika.

08

Serve immediately.

Chef's Tips

For a richer flavor, use full-fat plain yogurt. If the porridge becomes too thick, you can add a tablespoon or two of warm water or milk while stirring in the yogurt.

Easy Substitutions

You can substitute the butter with olive oil for a dairy-free option. For a slightly different flavor, a pinch of black pepper can be added with the paprika.

Storage & Reheating

Harapash is best enjoyed fresh. Leftovers can be stored in an airtight container in the refrigerator for up to 1 day, but the texture may change upon reheating.
