Preheat your oven to 350°F (175°C). Lightly grease a 9x9 inch (23x23 cm) baking dish.
In a large bowl, whisk together 1 cup of granulated sugar, vegetable oil, yogurt, eggs, and vanilla extract until well combined.
In a separate bowl, combine the semolina, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Pour the batter into the prepared baking dish and spread evenly. Bake for 30-35 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
While the cake bakes, prepare the syrup: In a small saucepan, combine 1 cup of granulated sugar, water, honey, and lemon juice. Bring to a boil over medium heat, then reduce heat and simmer for 5 minutes.
Once the cake is out of the oven, immediately pour the hot syrup evenly over the warm cake. The cake will absorb the syrup.
Let the cake cool completely to allow the syrup to fully soak in. Garnish with chopped walnuts before serving.
