Taiwanese Pork and Mushroom Rice (Lu Rou Fan)

This comforting Taiwanese Pork and Mushroom Rice, known as Lu Rou Fan, features tender braised pork belly and shiitake mushrooms simmered in a savory, aromatic sauce. Served over steamed rice, it's a beloved classic that's surprisingly simple to make at home.

✎
HOW TO MAKE IT

Let's cook.

01

Cut the pork belly into 1/2-inch cubes. If using dried shiitake mushrooms, rehydrate them in hot water for 20 minutes, then squeeze out excess water and slice them. Reserve the soaking liquid if desired.

02

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the pork belly and cook until browned on all sides, about 5-7 minutes. Drain off any excess fat.

03

Add minced garlic and sliced ginger to the pot. Sauté for 1 minute until fragrant.

04

Stir in the sliced shiitake mushrooms, soy sauce, dark soy sauce, rock sugar, five-spice powder, and 2 cups of water (or reserved mushroom soaking liquid).

05

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 45-50 minutes, or until the pork is very tender and the sauce has thickened slightly.

06

Taste and adjust seasoning if needed. Serve the braised pork and mushroom mixture hot over steamed white rice.

Chef's Tips

For extra flavor, you can add a hard-boiled egg to the braising liquid during the last 15 minutes of cooking. Garnish with chopped scallions or cilantro for freshness.

Easy Substitutions

If pork belly is unavailable, you can use pork shoulder, though it will be less rich. Regular granulated sugar can be used in place of rock sugar. Dried shiitake mushrooms offer the best flavor, but fresh shiitake can be used in a pinch.

Storage & Reheating

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of water if the sauce is too thick.
