Middle Eastern Spiced Lentil and Halloumi Wraps

HOW TO MAKE IT

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Add the sliced halloumi cheese to the skillet and cook for 2-3 minutes per side, until golden brown and slightly crispy. Remove from skillet and set aside.

In the same skillet, add the cooked lentils, ground cumin, smoked paprika, garlic powder, salt, and black pepper. Cook for 3-4 minutes over medium heat, stirring occasionally, until the lentils are heated through and fragrant.

Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds per side, or microwave for 15-20 seconds until pliable.

To assemble the wraps, spread a portion of the spiced lentils down the center of each warm tortilla. Top with a few slices of cooked halloumi, chopped cucumber, chopped tomatoes, and fresh parsley.
