Preheat your oven to 375°F (190°C).
In a 10-inch oven-safe non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage (casings removed) and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess grease.
Add the diced bell pepper to the skillet with the cooked sausage and sauté for 3-5 minutes, until softened.
While the sausage and peppers cook, whisk together the 6 large eggs and 1/4 cup milk in a medium bowl. Season with a pinch of salt and black pepper.
Pour the egg mixture evenly over the sausage and bell peppers in the skillet. Sprinkle the 1/4 cup shredded Parmesan cheese over the top.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden brown on top. A knife inserted into the center should come out clean.
Remove the frittata from the oven and let it rest for 5 minutes. Garnish with 2 tablespoons of fresh chopped parsley before slicing and serving warm.
