Egyptian Spiced Lentil and Egg Skillet

This hearty Egyptian-inspired skillet combines earthy lentils with aromatic spices and perfectly cooked eggs. It's a satisfying and flavorful lunch that comes together quickly, offering a taste of the Middle East in a single pan.

✎
HOW TO MAKE IT

Let's cook.

01

Heat olive oil in a medium skillet over medium heat.

02

Add rinsed lentils, vegetable broth, cumin, coriander, turmeric, salt, and pepper to the skillet. Stir to combine.

03

Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 15-18 minutes, or until lentils are tender and most of the liquid has been absorbed.

04

Once lentils are cooked, create two small wells in the lentil mixture using the back of a spoon.

05

Carefully crack one egg into each well. Cover the skillet and cook for 4-6 minutes, or until the egg whites are set and the yolks are still slightly runny (or cooked to your preference).

06

Remove the skillet from heat. Garnish with fresh chopped parsley and serve immediately.

Chef's Tips

For extra flavor, you can sauté a finely diced small onion or a clove of minced garlic in the olive oil before adding the lentils. Adjust the cooking time for the eggs based on your preferred yolk consistency.

Easy Substitutions

Feel free to use chicken broth instead of vegetable broth. Spinach or kale can be wilted into the lentils during the last few minutes of cooking for added greens. A pinch of cayenne pepper can be added for a touch of heat.

Storage & Reheating

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stovetop over low heat, adding a splash of water or broth if needed. The eggs may cook further upon reheating.
