Egyptian Fava Bean & Herb Patties

Discover the vibrant flavors of Egypt with these delightful fava bean and herb patties. Crispy on the outside and wonderfully tender within, they're a wholesome and satisfying choice for breakfast or a light meal. Infused with fresh herbs and aromatic spices, these patties are excellent served alongside a creamy tahini sauce or a medley of fresh vegetables.

✎
HOW TO MAKE IT

Let's cook.

01

In a medium bowl, mash the drained and rinsed fava beans with a fork until mostly smooth but still with some texture.

02

Add the chopped fresh parsley, fresh cilantro, all-purpose flour, ground cumin, ground coriander, garlic powder, salt, and black pepper to the mashed fava beans. Mix well until all ingredients are thoroughly combined.

03

Divide the mixture into 8 equal portions and shape each portion into a small, flat patty, about 1/2 inch thick.

04

Heat the vegetable oil in a large non-stick skillet over medium heat. Once the oil is shimmering, carefully place the patties into the skillet, ensuring not to overcrowd the pan.

05

Cook the patties for 4-5 minutes per side, or until golden brown and crispy. Adjust heat as needed to prevent burning.

06

Remove the cooked patties from the skillet and place them on a plate lined with paper towels to absorb any excess oil.

07

Serve immediately with your favorite breakfast accompaniments.
