Spanish Lemon and Honey Madeleines

In a medium bowl, whisk 2 large eggs with 1/4 cup granulated sugar until light and fluffy, about 2 minutes. Stir in 2 tablespoons honey and 1 teaspoon lemon zest.
Gently fold the dry ingredients into the egg mixture until just combined, being careful not to overmix.
