Persian Chicken and Barberry Rice (Zereshk Polo ba Morgh)

Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear chicken thighs skin-side down for 5-7 minutes until golden brown, then flip and sear for another 3-4 minutes. Remove chicken and set aside.
Add chopped onion to the pot and sauté over medium heat for 5-7 minutes until softened and translucent. Add minced garlic and turmeric powder, cooking for 1 minute until fragrant.
Stir in crushed tomatoes, chicken broth, steeped saffron, salt, and black pepper. Bring the sauce to a simmer.
Return the seared chicken thighs to the pot, nestling them into the sauce. Reduce heat to low, cover, and simmer for 40-45 minutes, or until chicken is cooked through and tender.
While the chicken simmers, rinse basmati rice thoroughly until the water runs clear. Cook rice according to package directions, typically by boiling in salted water until al dente, then draining.
In a small saucepan, melt butter over medium-low heat. Add rinsed barberries and sugar, cooking for 2-3 minutes, stirring gently, until barberries are plump and glossy. Be careful not to burn them.
Once the rice is cooked, gently fold in the barberry mixture. You can also layer the barberry rice over plain rice for a more dramatic presentation.
Serve the tender Persian chicken with its rich tomato-saffron sauce alongside the fragrant barberry rice. Garnish with fresh herbs if desired.
