✎
HOW TO MAKE IT

Let's cook.

01

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add lamb cubes and brown on all sides, about 5-7 minutes. Remove lamb and set aside.

02

Add chopped onion to the pot and cook until softened and translucent, about 5-7 minutes, stirring occasionally. Add minced garlic and cook for 1 minute more until fragrant.

03

Stir in turmeric powder and cinnamon powder, cooking for 30 seconds until aromatic. Return the browned lamb to the pot.

04

Add rinsed yellow split peas, diced tomatoes (undrained), dried limes, beef broth, salt, and black pepper to the pot. Stir well to combine.

05

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 75-90 minutes, or until the lamb is very tender and the split peas are cooked through. Stir occasionally to prevent sticking.

06

Carefully remove the dried limes before serving. Taste and adjust seasoning if necessary.

07

Serve hot, traditionally with basmati rice.

Chef's Tips

For a richer flavor, you can soak the dried limes in hot water for 15 minutes before adding them to the stew. This also helps to release their aroma. If you prefer a thicker stew, mash a small portion of the split peas against the side of the pot before serving.

Easy Substitutions

Beef stew meat can be used instead of lamb. If dried limes are unavailable, a tablespoon of fresh lime juice added at the end of cooking can provide a similar tangy note, though the flavor will be different. For a vegetarian version, use chickpeas or lentils instead of meat and vegetable broth.

Storage & Reheating

Leftover Khoresh-e Gheymeh can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop over medium-low heat, adding a splash of water or broth if needed to loosen the consistency.
