Once the lentils are cooked and drained, transfer them to a large mixing bowl.
Add the finely diced red onion and chopped fresh parsley to the cooked lentils.
Pour the prepared dressing over the lentil mixture.
Toss everything gently until all ingredients are well combined and coated with the dressing.
Serve warm or at room temperature. For best flavor, let it sit for at least 15 minutes before serving.
