HOW TO MAKE IT

Let's cook.

01

Preheat oven to 400°F (200°C). Toss chopped zucchini, red bell pepper, and drained chickpeas with 1 tablespoon olive oil, 1 teaspoon cumin, and 1 teaspoon paprika on a baking sheet. Roast for 15-20 minutes, or until vegetables are tender-crisp.

02

While vegetables roast, bring vegetable broth to a boil in a small saucepan. Add couscous, stir, cover, and remove from heat. Let stand for 5 minutes, then fluff with a fork.

03

In a large bowl, whisk together the remaining 2 tablespoons olive oil and fresh lemon juice to create the dressing.

04

Add the fluffed couscous, roasted vegetables, and chickpeas to the large bowl with the dressing.

05

Stir in the chopped fresh parsley until well combined.

06

Serve warm or chilled.

COOKING TIP

Make it better

For extra flavor, add a pinch of cayenne pepper to the roasted vegetables before roasting. Toast the dry couscous in a dry pan for 1-2 minutes before adding broth for a nuttier flavor. Adjust lemon juice and spices to your taste preference.

SUBSTITUTIONS

Easy swaps

Any seasonal vegetables can be roasted, such as sweet potato, carrots, or broccoli. Quinoa or bulgur can be used instead of couscous for a different texture and nutritional profile. For a protein boost, add grilled chicken or crumbled feta cheese.

STORAGE

Keep it fresh

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. This bowl is excellent for meal prepping.
