✎
HOW TO MAKE IT

Let's cook.

01

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

02

Add 1/2 cup of diced red onion and 1/2 cup of diced bell pepper to the skillet. Sauté for 3-4 minutes until softened.

03

Stir in 1 can of rinsed and drained chickpeas, 1 teaspoon of ground cumin, 1/2 teaspoon of ground coriander, 1/4 teaspoon of smoked paprika, and 1/4 teaspoon of salt. Cook for another 5 minutes, stirring occasionally, until the chickpeas are heated through and the spices are fragrant.

04

Remove the skillet from the heat and stir in 1/2 cup of chopped fresh parsley.

05

Warm the 4 large flour tortillas briefly in a dry skillet or microwave for 15-20 seconds each to make them more pliable.

06

Divide the chickpea and vegetable mixture evenly among the warmed tortillas. If desired, drizzle with 1/4 cup of plain Greek yogurt.

07

Fold in the sides of each tortilla, then roll them up tightly to form wraps. Serve immediately.

Chef's Tips

For an extra kick, add a pinch of cayenne pepper or a dash of harissa paste to the chickpea mixture. You can also toast the chickpeas in the oven for 10-15 minutes at 375°F (190°C) before adding them to the skillet for a crispier texture.

Easy Substitutions

Feel free to use other vegetables like spinach, zucchini, or carrots. For a vegan option, omit the Greek yogurt or substitute with a dairy-free alternative. Whole wheat tortillas can be used instead of flour tortillas.
▱

Storage & Reheating

Leftover chickpea mixture can be stored in an airtight container in the refrigerator for up to 3 days. Assemble wraps just before serving to prevent sogginess.
