Hearty Moroccan Beef & Chickpea Skillet
Discover a vibrant, one-pan meal with this Moroccan-inspired beef and chickpea skillet. Tender beef and wholesome chickpeas are slow-simmered in a rich, aromatic tomato sauce, creating a deeply satisfying dish perfect for any evening.
Let's cook.
Heat olive oil in a large skillet over medium-high heat. Add beef cubes and cook until browned on all sides, about 5-7 minutes. Remove beef from skillet and set aside.
Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic, cumin, coriander, turmeric, and cayenne pepper (if using), and cook for 1 minute more until fragrant.
Return the browned beef to the skillet. Stir in diced tomatoes, rinsed chickpeas, beef broth, salt, and black pepper.
Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 20 minutes, or until the beef is tender and the sauce has slightly thickened.
Taste and adjust seasoning as needed. Garnish with fresh chopped cilantro before serving.
