Middle Eastern Spiced Yogurt and Egg Toast

This vibrant Middle Eastern-inspired breakfast features creamy spiced yogurt topped with a perfectly fried egg and fresh herbs, all served on toasted bread. It's a quick, flavorful, and satisfying way to start your day.

✎
HOW TO MAKE IT

Let's cook.

01

In a small bowl, combine the Greek yogurt, za'atar, and red pepper flakes (if using). Stir well to combine and set aside.

02

Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Toast the sourdough bread slices for 2-3 minutes per side, until golden brown and crisp. Remove from skillet and set aside.

03

Add the remaining 1 tablespoon of olive oil to the same skillet over medium-low heat. Crack the eggs into the skillet, being careful not to break the yolks.

04

Fry the eggs for 3-4 minutes, or until the whites are set and the yolks are still runny. Season lightly with salt and pepper.

05

Spread the spiced yogurt evenly over the toasted bread slices. Top each slice with a fried egg.

06

Drizzle with a little extra olive oil and sprinkle generously with fresh chopped parsley before serving immediately.

Chef's Tips

For an extra layer of flavor, warm the za'atar in a dry pan for 30 seconds before mixing it into the yogurt. This enhances its aromatic qualities. You can also add a squeeze of lemon juice to the yogurt for brightness.

Easy Substitutions

If you don't have za'atar, a pinch of dried oregano and sesame seeds can be used. Feta cheese crumbled over the top would also be a delicious addition. Any crusty bread works well in place of sourdough.

Storage & Reheating

This dish is best enjoyed immediately. Leftover components can be stored separately in airtight containers in the refrigerator for up to 1 day, but the eggs and toast will not retain their texture upon reheating.
