Preheat your oven to 350°F (175°C).

In a large bowl, whisk the eggs until well combined. Add the chopped parsley, cilantro, dill, chives, walnuts, barberries (if using), turmeric, salt, and black pepper. Mix gently until all ingredients are evenly distributed.

Heat the olive oil in a 10-inch oven-safe non-stick skillet over medium heat. Once the oil is shimmering, pour the egg and herb mixture into the skillet, spreading it evenly.

Cook on the stovetop for 5-7 minutes, or until the edges begin to set and turn golden brown.

Transfer the skillet to the preheated oven. Bake for 15-18 minutes, or until the kuku sabzi is fully set in the center and lightly golden on top.

Remove from the oven and let it cool in the skillet for 5 minutes before carefully inverting it onto a serving plate or cutting it directly in the pan. Serve warm or at room temperature.
