Korean Kimchi and Egg Toast

This quick and savory Korean-inspired breakfast toast features crispy kimchi, a perfectly fried egg, and a hint of gochujang for a flavorful start to your day. It's a simple yet satisfying meal that comes together in minutes.

✎
HOW TO MAKE IT

Let's cook.

01

Toast the 2 slices of sourdough bread to your desired crispness. Set aside.

02

In a medium non-stick skillet, melt 1 tablespoon of unsalted butter over medium heat. Add 1/2 cup of chopped kimchi and sauté for 3-4 minutes, stirring occasionally, until it becomes slightly crispy and fragrant.

03

Push the kimchi to one side of the skillet. Crack 2 large eggs into the empty side of the skillet and fry them to your preference (sunny-side up, over easy, etc.).

04

While the eggs are cooking, spread 1/2 teaspoon of gochujang evenly over the toasted bread slices.

05

Once the eggs are cooked, carefully place one fried egg on each slice of gochujang-smeared toast. Top with the sautéed kimchi.

06

Drizzle each toast with 1/2 teaspoon of sesame oil and garnish with 1 tablespoon of sliced scallions before serving immediately.

Chef's Tips

For extra flavor, you can add a pinch of sugar to the kimchi while sautéing to balance its acidity. Adjust the amount of gochujang to your spice preference.

Easy Substitutions

Feel free to use any bread you prefer, such as whole wheat or brioche. If you don't have gochujang, a tiny dash of sriracha can offer a similar spicy kick, though the flavor profile will differ slightly.

Storage & Reheating

This dish is best enjoyed fresh. Leftovers are not recommended as the toast will become soggy and the egg texture will change.
