Authentic Jamaican Rum Cake with Dried Fruits and Spices

In a large bowl, cream together the softened butter and 1 cup granulated sugar until light and fluffy. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk and 1/2 cup dark rum, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
Fold in the mixed dried fruits. Pour the batter into the prepared baking pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
While the cake bakes, prepare the rum glaze: In a small saucepan, combine 1/4 cup dark rum, 1/4 cup water, and 1/4 cup granulated sugar. Bring to a simmer over medium heat, stirring until the sugar dissolves. Remove from heat.
Once the cake is out of the oven, immediately poke holes all over the top with a wooden skewer. Slowly pour the warm rum glaze evenly over the hot cake, allowing it to soak in.
Let the cake cool completely in the pan on a wire rack before inverting and serving. This allows the glaze to fully absorb and the cake to set.
