HOW TO MAKE IT

Heat 1 tablespoon of olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Add the beef stew meat and brown on all sides for 5-7 minutes. Remove the beef and set aside.

Add the chopped yellow onion to the same pot and cook over medium heat, stirring occasionally, until softened and translucent, about 8-10 minutes. Stir in the turmeric powder and cook for 1 minute more until fragrant.

Return the browned beef to the pot. Add the finely chopped mixed fresh herbs (parsley, cilantro, and fenugreek) and cook, stirring frequently, for 10-15 minutes until the herbs darken in color and release their aroma. This step is crucial for flavor.

Pour in the 4 cups of beef broth, add the rinsed and drained kidney beans, and the pierced dried Persian limes. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Bring the stew to a boil, then reduce the heat to low, cover the pot, and simmer for at least 2 hours, or until the beef is very tender. Stir occasionally to prevent sticking.

Taste and adjust seasoning if necessary. The stew should have a rich, slightly tart flavor from the dried limes. If desired, gently mash a few of the kidney beans against the side of the pot to slightly thicken the stew.
