Prepare the bananas by peeling and slicing each saba banana lengthwise into two pieces. If using canned jackfruit, drain it well and slice into thin strips.

Lay one lumpia wrapper flat on a clean surface. Sprinkle about 1 tablespoon of brown sugar evenly over the center of the wrapper. Place one banana half and a few strips of jackfruit on top of the sugar.

Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll the wrapper tightly from the bottom towards the top corner. Moisten the top corner with a little water to seal the wrapper securely.

Repeat the process for the remaining bananas, jackfruit, and wrappers.

Heat 2 cups of vegetable oil in a deep frying pan or pot over medium heat until it reaches 350°F (175°C). Carefully place 2-3 turon pieces into the hot oil, ensuring not to overcrowd the pan.

Fry the turon for 3-5 minutes on each side, or until they are golden brown and crispy. Use tongs to carefully turn them to ensure even cooking.

Once golden brown, remove the turon from the oil and place them on a wire rack lined with paper towels to drain excess oil. Serve immediately while warm and crispy.
