Churro Bites with Chocolate-Chili Dipping Sauce

These delightful churro bites are crispy on the outside and soft on the inside, coated in cinnamon sugar. Served with a rich chocolate-chili dipping sauce, they offer a perfect balance of sweet and a hint of spice.

✎
HOW TO MAKE IT

Let's cook.

01

In a medium saucepan, combine 1 cup water, butter, 1 tablespoon granulated sugar, and salt. Bring to a rolling boil over medium-high heat.

02

Remove the saucepan from heat and immediately stir in the flour until a ball of dough forms. Return to low heat and cook, stirring constantly, for 1 minute to dry out the dough slightly.

03

Transfer the dough to a mixing bowl and let cool for 5 minutes. Add the egg and beat until fully incorporated and the dough is smooth.

04

Heat vegetable oil in a deep skillet or pot over medium-high heat until it reaches 350°F/175°C. While the oil heats, combine 1/2 cup granulated sugar and ground cinnamon in a shallow dish for the coating.

05

Carefully spoon the churro dough into a piping bag fitted with a star tip. Pipe 1-inch pieces of dough directly into the hot oil, cutting with kitchen shears. Fry for 2-3 minutes, turning occasionally, until golden brown and cooked through. Do not overcrowd the pan; fry in batches.

06

Remove churro bites with a slotted spoon and immediately toss them in the cinnamon sugar mixture until evenly coated. Place on a wire rack.

07

For the dipping sauce, combine dark chocolate chips, heavy cream, and chili powder in a microwave-safe bowl. Microwave on high for 30 seconds, then stir. Continue microwaving in 15-second intervals, stirring after each, until smooth and melted.

08

Serve the warm churro bites immediately with the chocolate-chili dipping sauce.

Chef's Tips

For extra crispy churros, ensure the oil is at the correct temperature. If the oil is too cool, the churros will absorb too much oil and be greasy. If it's too hot, they will brown too quickly on the outside and remain raw inside. A candy thermometer is very helpful here. You can also use a deep-fryer for easier temperature control.

Easy Substitutions

If you don't have a piping bag, you can carefully drop spoonfuls of dough into the hot oil for a more rustic look. For a milder sauce, omit the chili powder or use a pinch of cayenne pepper for a different kind of heat. Milk chocolate can be used instead of dark chocolate for a sweeter sauce.
▱

Storage & Reheating

Churro bites are best enjoyed fresh. Leftovers can be stored in an airtight container at room temperature for up to 1 day, but they will lose their crispness. The chocolate sauce can be stored in the refrigerator for up to 3 days and reheated gently in the microwave.
