Hearty Albanian Lamb and Orzo Bake (Tavë Kosi me Orzo)
This comforting Albanian-inspired skillet dish brings together succulent lamb and delicate orzo pasta, all baked to perfection in a rich, tangy yogurt sauce. It's a deeply flavorful and satisfying meal, ideal for a family dinner.

Preheat oven to 375°F (190°C).
Heat olive oil in a large oven-safe skillet over medium-high heat. Add lamb cubes and sear until browned on all sides, about 5-7 minutes. Remove lamb from skillet and set aside.
Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and dried oregano, cooking for 1 minute more until fragrant.
Return lamb to the skillet. Stir in orzo pasta, chicken broth, salt, and black pepper. Bring to a simmer, then cover and transfer the skillet to the preheated oven. Bake for 20 minutes.
While the skillet bakes, whisk together yogurt and egg in a medium bowl until smooth.
Remove skillet from the oven. Stir the orzo and lamb mixture, then pour the yogurt-egg mixture evenly over the top. Do not stir it in.
Return the skillet to the oven and bake uncovered for another 20-25 minutes, or until the yogurt topping is set and lightly golden brown.
Let the skillet rest for 5 minutes before serving.
