Adas Polo (Persian Lentil Rice)
Adas Polo is a comforting and flavorful Persian rice dish made with lentils, raisins, and aromatic spices. It's a hearty and satisfying vegetarian meal, perfect for a nutritious lunch.

In a medium saucepan, combine the rinsed lentils with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15 minutes, or until lentils are tender but still hold their shape. Drain and set aside.
Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté for 5-7 minutes until softened and translucent.
Stir in the turmeric powder and cinnamon powder, cooking for 1 minute until fragrant.
Add the rinsed basmati rice, cooked lentils, golden raisins, vegetable broth, salt, and black pepper to the pot. Stir gently to combine.
Bring the mixture to a boil, then reduce the heat to low, cover tightly, and simmer for 20 minutes, or until all the liquid is absorbed and the rice is tender.
Remove the pot from the heat and let it rest, covered, for 10 minutes. This allows the rice to steam further and become fluffy.
Fluff the Adas Polo gently with a fork before serving.
