Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
In a large bowl, combine the diced potatoes, bell pepper, and onion. Drizzle with olive oil, salt, and black pepper, then toss to coat evenly.
Spread the seasoned vegetables in a single layer on one half of the prepared baking sheet.
Crumble the breakfast sausage over the other half of the baking sheet, ensuring it's in a relatively even layer.
Bake for 15 minutes. Remove the sheet pan from the oven, stir the vegetables, and break up any large clumps of sausage. Return to the oven and bake for another 10-15 minutes, or until the sausage is cooked through and the vegetables are tender and slightly browned.
If desired, crack the 4 eggs directly onto the sheet pan during the last 5-7 minutes of cooking, allowing them to bake until the whites are set and the yolks are to your liking.
Serve immediately, optionally topped with fresh chopped parsley or hot sauce.
