Let's cook.
In a large bowl, combine the ground lamb, chopped onion, minced garlic, ground cumin, ground coriander, cayenne pepper (if using), salt, and black pepper. Mix thoroughly with your hands until all ingredients are well incorporated.
Divide the lamb mixture into 12 equal portions. Shape each portion into an oval or cylindrical kofta, about 3-4 inches long.
Heat the olive oil in a large skillet over medium-high heat. Once hot, carefully place the kofta into the skillet, ensuring not to overcrowd the pan. You may need to cook them in batches.
Cook the kofta for 4-5 minutes per side, turning occasionally, until they are browned all over and cooked through. The internal temperature should reach 160°F (71°C).
While the kofta are cooking, prepare the yogurt sauce: In a small bowl, whisk together the Greek yogurt, chopped fresh mint, and lemon juice. Season with a pinch of salt and pepper to taste.
Remove the cooked kofta from the skillet and serve immediately with the prepared yogurt sauce. These are excellent with pita bread or rice.
