One-Pan Middle Eastern Spiced Chicken & Chickpea Dinner

HOW TO MAKE IT

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Season the chicken pieces with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Add the chicken to the hot skillet and cook for 5-7 minutes, or until browned on all sides. Remove the chicken from the skillet and set aside.

Reduce heat to medium. Add the ground cumin, smoked paprika, turmeric powder, and cayenne pepper (if using) to the skillet. Cook for 1 minute, stirring constantly, until fragrant.

Stir in the rinsed and drained chickpeas and 1 cup of chicken broth. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet.

Return the browned chicken to the skillet. Cover and simmer for 10-12 minutes, or until the chicken is cooked through and the sauce has slightly thickened.

Remove the skillet from the heat. Garnish generously with 1/2 cup of fresh chopped parsley before serving.
