Add the diced potatoes to the skillet and cook for 10-12 minutes, stirring occasionally, until they are tender and lightly browned.
Stir in the chopped onion and minced garlic. Cook for another 3-5 minutes until the onion softens and becomes translucent.
Add the ground cumin, smoked paprika, salt, and black pepper. Stir well to coat the potatoes and onions evenly, cooking for 1 minute until fragrant.
Create two small wells in the potato mixture. Carefully crack one egg into each well.
Cover the skillet and cook for 5-7 minutes, or until the egg whites are set and the yolks are cooked to your desired consistency.
Garnish with fresh chopped parsley and serve immediately.
