Maqluba: Upside-Down Chicken and Rice with Roasted Vegetables

Season chicken pieces with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/2 tablespoon Maqluba spice blend. In a large pot or Dutch oven, heat 2 tablespoons olive oil over medium-high heat. Sear chicken pieces until golden brown on all sides, about 5-7 minutes per side. Remove chicken and set aside.
In the same pot, add the remaining olive oil. Fry the eggplant, potato, and cauliflower slices in batches until golden brown and tender, about 3-5 minutes per side. Remove vegetables and set aside on paper towels to drain excess oil.
Arrange the seared chicken pieces at the bottom of the pot. Layer the fried vegetables over the chicken, distributing them evenly.
Drain the soaked Basmati rice. In a small bowl, mix the drained rice with the remaining 1/2 tablespoon Maqluba spice blend, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 teaspoon turmeric powder. Spread the seasoned rice evenly over the vegetables in the pot.
Carefully pour the chicken broth over the rice. Ensure the broth just covers the rice by about 1 inch. Bring the liquid to a boil over high heat.
Once boiling, reduce the heat to low, cover the pot tightly, and simmer for 25 minutes, or until all the liquid is absorbed and the rice is cooked through.
Remove the pot from heat and let it rest, covered, for 10 minutes. This allows the steam to finish cooking the rice and helps the layers set.
To serve, place a large, flat serving platter upside down over the pot. Carefully and confidently invert the pot onto the platter. Lift the pot slowly to reveal the beautifully layered Maqluba. Garnish with fresh parsley or toasted nuts if desired.
