Korean Kimchi and Spam Rice Bowl

HOW TO MAKE IT

Heat a large non-stick skillet over medium heat. Add the sliced Spam and cook for 3-4 minutes per side, until golden brown and slightly crispy. Remove the Spam from the skillet and set aside.

In the same skillet, add the chopped kimchi. If using, stir in the gochujang. Sauté for 3-5 minutes over medium heat, until the kimchi is softened and slightly caramelized.

While the kimchi is cooking, heat the sesame oil in a separate small non-stick pan over medium heat. Crack the eggs into the pan and fry them to your desired doneness, preferably with a runny yolk, for about 2-3 minutes.
