Spicy Gochujang Tofu & Veggie Stir-Fry

Press excess water from the tofu for at least 15 minutes, then cut into 1-inch cubes.

Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook for 5-7 minutes, turning occasionally, until golden brown and crispy on all sides. Remove the tofu from the skillet and set aside.

Add broccoli florets, sliced carrots, and sliced bell pepper to the same skillet. Stir-fry for 3-5 minutes over medium-high heat until the vegetables are tender-crisp.

Add minced garlic to the vegetables and stir-fry for 30 seconds until fragrant.

In a small bowl, whisk together gochujang, soy sauce, honey, and water to create the sauce.

Return the cooked tofu to the skillet with the vegetables. Pour the sauce over the tofu and vegetables, tossing gently to coat everything evenly. Cook for 1-2 minutes, stirring constantly, until the sauce thickens slightly and coats the ingredients.

Serve immediately, optionally garnished with sesame seeds or chopped green onions.
