Rinse the red lentils thoroughly under cold water until the water runs clear. Set aside.
In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and cook for 5-7 minutes, or until softened and translucent.
Add the minced garlic, ground cumin, and turmeric powder to the pot. Sauté for 1 minute, stirring constantly, until fragrant.
Stir in the rinsed lentils and vegetable broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are very tender.
Remove the pot from the heat. Stir in the fresh lemon juice, salt, and black pepper. Taste and adjust seasonings as needed.
For a smoother soup, use an immersion blender to blend a portion of the soup directly in the pot, or carefully transfer half of the soup to a regular blender and blend until smooth, then return to the pot and stir to combine. Serve hot.
