Jordanian Mujadara with Crispy Onions and Yogurt
This hearty Jordanian Mujadara recipe combines tender lentils and fluffy rice, topped with a generous layer of deeply caramelized crispy onions. Served with a cool, tangy yogurt, it's a comforting and flavorful vegetarian meal perfect for lunch.

In a medium saucepan, combine the rinsed lentils and 2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until lentils are partially cooked.
While the lentils cook, heat 1/4 cup of olive oil in a large skillet over medium-high heat. Add the sliced yellow onions and cook, stirring occasionally, for 15-20 minutes until deeply caramelized and crispy. Remove onions with a slotted spoon and set aside on a paper towel-lined plate, reserving the flavored oil in the skillet.
Add the rinsed rice, remaining 2 cups of vegetable broth, cumin powder, salt, and black pepper to the saucepan with the lentils. Stir gently to combine.
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the rice and lentils are tender and all liquid is absorbed.
Fluff the mujadara gently with a fork. Drizzle with the reserved flavored olive oil from cooking the onions.
Serve the warm mujadara topped generously with the crispy caramelized onions and a dollop of plain yogurt on the side.
