Japanese Ginger Pork and Cabbage Stir-fry
This quick and flavorful Japanese stir-fry features thinly sliced pork simmered with tender cabbage in a savory ginger-soy sauce. It's a perfect weeknight dinner that comes together in under 30 minutes.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the thinly sliced pork loin to the hot skillet and cook for 3-5 minutes, stirring occasionally, until browned and cooked through. Remove the pork from the skillet and set aside.
Add the sliced yellow onion to the same skillet and sauté for 3 minutes until softened. Add the shredded green cabbage and cook for another 5-7 minutes, stirring occasionally, until the cabbage is tender-crisp.
Stir in the minced garlic and grated fresh ginger. Cook for 1 minute until fragrant.
Return the cooked pork to the skillet with the vegetables. Pour in the soy sauce, mirin, and sugar. Stir well to combine all ingredients and coat them evenly with the sauce.
Cook for 2-3 minutes more, allowing the sauce to slightly thicken and all the flavors to meld. Serve immediately.
