Add the breakfast sausage to the skillet and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess grease.
Stir in the diced potatoes and diced onion. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Cook, stirring occasionally, until the potatoes are tender and lightly browned, about 10-12 minutes.
Preheat your oven to 375°F (190°C).
Create 6 small wells in the potato and sausage mixture. Crack one egg into each well.
Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the egg whites are set and the yolks are cooked to your desired doneness.
Remove the skillet from the oven, sprinkle with 1/4 cup of shredded cheddar cheese, and let it rest for 2 minutes before serving.
