Savory French Ham and Cheese Galettes

Experience a taste of France with these delightful savory galettes. Each crispy buckwheat crepe cradles a luscious filling of melted Gruyère cheese, savory ham, and a perfectly cooked egg. They're an incredibly satisfying and quick-to-prepare lunch or light dinner.

✎
HOW TO MAKE IT

Let's cook.

01

In a medium bowl, whisk together the buckwheat flour, water, and salt until smooth. Let the batter rest for 5 minutes.

02

Heat a 10-inch non-stick skillet over medium heat. Add 1/2 teaspoon of butter and swirl to coat the pan.

03

Pour about 1/4 cup of batter into the hot skillet, tilting the pan to spread it evenly into a thin circle. Cook for 2-3 minutes until the edges are set and slightly crispy.

04

Flip the galette. Immediately place one slice of ham in the center, sprinkle with half of the shredded Gruyère cheese, and crack one egg directly onto the cheese.

05

Cook for 2-3 minutes, or until the egg white is set and the yolk is still runny (or to your desired doneness). Fold the edges of the galette inward to form a square or octagon, leaving the egg exposed in the center.

06

Carefully slide the finished galette onto a plate. Repeat the process for the second galette, adding more butter to the pan if needed.

07

Garnish with fresh chopped chives and serve immediately.

Chef's Tips

For best results, ensure your skillet is properly heated before adding the batter. A thin layer of batter is key for a crispy galette. If the batter is too thick, add a tablespoon or two more water.
↔

Easy Substitutions

You can substitute Swiss cheese or Comté for Gruyère. Prosciutto or turkey ham can replace regular ham. For a vegetarian option, omit the ham and add sautéed mushrooms or spinach.

Storage & Reheating

Galettes are best enjoyed fresh. Leftovers can be stored in an airtight container in the refrigerator for up to 1 day, but the texture will not be as crisp when reheated.
