✎
HOW TO MAKE IT

Let's cook.

01

Preheat your oven to 400°F (200°C).

02

In a 9-inch oven-safe skillet (preferably cast iron), sprinkle the granulated sugar evenly over the bottom. Cook over medium heat without stirring until the sugar melts and turns into a deep amber caramel, about 5-7 minutes. Watch carefully to prevent burning.

03

Remove the skillet from the heat and carefully add the butter pieces, swirling the pan to combine. The caramel will bubble vigorously. Arrange the apple quarters tightly in a single layer over the caramel in the skillet.

04

Roll out the thawed puff pastry slightly larger than the skillet. Carefully place the puff pastry over the apples, tucking the edges down around the apples and into the skillet.

05

Bake for 25-30 minutes, or until the puff pastry is golden brown and puffed. The apples should be tender when pierced with a knife.

06

Carefully remove the skillet from the oven. Let it cool for 5 minutes. Place a large serving plate upside down over the skillet, then, using oven mitts, carefully and quickly invert the tarte onto the plate. Be cautious of hot caramel.

07

Drizzle with vanilla extract over the warm tarte and serve immediately, perhaps with a scoop of vanilla ice cream or a dollop of crème fraîche.

Chef's Tips

For best results, use firm, slightly tart apples that hold their shape well during baking. Granny Smith or Honeycrisp are excellent choices. Ensure your puff pastry is properly thawed but still cold for easy handling. If the caramel hardens too much after adding butter, you can gently warm it over low heat for a minute to soften it before arranging the apples.

Easy Substitutions

You can substitute pears for apples for a different fruit tarte. For a richer caramel, a pinch of sea salt can be added with the butter. If you don't have puff pastry, a homemade pie crust can be used, though the texture will be different.

Storage & Reheating

Tarte Tatin is best enjoyed warm and fresh. Leftovers can be stored covered at room temperature for up to 1 day, or refrigerated for up to 2 days. Reheat gently in a low oven (300°F/150°C) for 10-15 minutes to crisp the pastry and warm the apples.
