Fragrant Lavender Honey Madeleines
Indulge in the delicate charm of these French-inspired madeleines, where the subtle perfume of lavender meets the golden sweetness of honey. Each shell-shaped cake offers a tender, airy crumb, making them an ideal companion for your afternoon tea or a delightful light dessert.
Let's cook.
In a medium bowl, whisk together the eggs, granulated sugar, honey, vanilla extract, and dried culinary lavender until well combined and slightly frothy.
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
Gradually fold in the cooled melted butter until the batter is smooth. Cover the bowl and refrigerate the batter for at least 30 minutes, or up to 2 hours, to allow it to chill and thicken.
Preheat your oven to 375°F/190°C. Lightly butter and flour a Madeleine pan.
Spoon about 1 tablespoon of batter into each mold of the prepared Madeleine pan. Do not overfill.
Bake for 10-12 minutes at 375°F/190°C, or until the edges are golden brown and the characteristic "hump" has formed in the center.
Carefully remove the Madeleines from the pan immediately and transfer them to a wire rack to cool completely. Dust with powdered sugar if desired before serving.
