French Apple and Cinnamon Crêpes

Cook the apples for 8-10 minutes, stirring occasionally, until they are tender and slightly caramelized. Stir in the vanilla extract and set aside.

Heat a non-stick crêpe pan or a 8-inch skillet over medium heat. Lightly butter the pan.

Pour about 1/4 cup of crêpe batter into the hot pan, tilting and swirling the pan to evenly coat the bottom with a thin layer of batter.

Cook for 1-2 minutes, until the edges are golden and the crêpe can be easily lifted. Flip the crêpe and cook for another 30-60 seconds on the second side.

Transfer the cooked crêpe to a plate and repeat with the remaining batter, buttering the pan as needed.
