Preheat oven to 425°F (220°C). Unroll one pie crust and gently press it into a 9-inch pie plate. Trim edges if necessary, leaving a 1/2-inch overhang.

In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and salt. Toss gently until the apples are evenly coated.

Pour the apple mixture into the pie crust-lined plate, mounding it slightly in the center. Dot the top of the apple filling with the small pieces of butter.

Unroll the second pie crust and place it over the apple filling. Trim the edges to match the bottom crust's overhang. Crimp the edges of both crusts together to seal, then cut several small slits in the top crust to allow steam to escape.

Bake for 15 minutes at 425°F (220°C). Reduce oven temperature to 375°F (190°C) and continue baking for 40-45 minutes, or until the crust is golden brown and the filling is bubbly. If the crust browns too quickly, loosely tent with aluminum foil.

Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before slicing and serving. This allows the filling to set properly.
