Albanian Spinach and Feta Phyllo Swirls (Byrek me Spinaq)

HOW TO MAKE IT

Preheat your oven to 375°F (190°C). Lightly grease a large baking sheet.

In a large bowl, combine the thawed and squeezed dry spinach, crumbled feta cheese, eggs, chopped dill, chopped parsley, and black pepper. Mix well until all ingredients are evenly distributed.

Lay one sheet of phyllo dough on a clean, dry surface. Brush lightly with melted butter. Place a second sheet on top and brush with butter again. Repeat with a third sheet, brushing with butter.

Spoon about 1/4 cup of the spinach and feta filling along one long edge of the phyllo sheets. Carefully roll the phyllo sheets tightly into a long cylinder.

Gently coil the rolled phyllo into a spiral shape and place it on the prepared baking sheet. Repeat the process with the remaining phyllo sheets and filling, arranging the spirals next to each other to form a larger, continuous swirl or individual swirls.

Brush the top of the phyllo swirls generously with any remaining melted butter.

Bake for 30 minutes, or until the phyllo is golden brown and crispy.
