Add sliced leeks to the same skillet, reducing heat to medium. Cook, stirring occasionally, until softened, about 5-7 minutes.
Stir in minced garlic and cook for 1 minute until fragrant.
Return the browned chicken to the skillet. Add crushed tomatoes, chicken broth, dried oregano, salt, and black pepper. Stir to combine.
Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until the chicken is cooked through and tender.
Serve hot, optionally garnished with fresh parsley.
