Savory Turkish Cheese and Herb Gozleme

In a large bowl, combine the all-purpose flour and 1/2 teaspoon salt. Gradually add the warm water and 1 tablespoon olive oil, mixing until a shaggy dough forms. Knead on a lightly floured surface for 5-7 minutes until smooth and elastic. Cover the dough with a clean kitchen towel and let it rest for 15 minutes.

While the dough rests, prepare the filling. In a medium bowl, combine the crumbled feta cheese, shredded mozzarella cheese, chopped fresh parsley, and chopped fresh mint. Mix well.

Divide the rested dough into 4 equal portions. On a lightly floured surface, roll out each portion into a very thin rectangle, approximately 8x10 inches.

Spoon about 1/4 of the cheese and herb filling onto one half of each rolled-out dough rectangle, leaving a small border around the edges.

Fold the other half of the dough over the filling, pressing down firmly to seal the edges. You can crimp the edges with a fork to ensure a good seal.

Heat a large non-stick skillet or griddle over medium heat. Cook each gozleme for 3-4 minutes per side, or until golden brown and crispy. Brush with melted butter after flipping.

Remove from the skillet, brush with more melted butter if desired, and cut into smaller pieces before serving warm.
