Tunisian Honey-Kissed Sesame Fritters (Zlebia)

In a small bowl, combine the active dry yeast, 1/2 teaspoon of sugar, and 2 tablespoons of warm water. Let it sit for 5 minutes until foamy.
In a large bowl, combine the all-purpose flour and the activated yeast mixture. Gradually add the remaining warm water, mixing until a smooth, thick batter forms. Cover the bowl with plastic wrap and let it rise in a warm place for 1 hour, or until doubled in size.
While the batter rises, prepare the honey syrup: In a small saucepan, combine the honey and 1/4 cup of water. Bring to a gentle simmer over medium heat, stirring until the honey is fully dissolved. Remove from heat and stir in the orange blossom water. Set aside to cool.
Heat the vegetable oil in a deep pot or Dutch oven over medium-high heat until it reaches 350°F (175°C).
Dip your fingers in a little oil, then take small portions of the risen batter and carefully drop them into the hot oil, forming irregular fritter shapes. Fry the fritters in batches for 3-4 minutes per side, or until golden brown and cooked through. Do not overcrowd the pot.
Using a slotted spoon, remove the cooked fritters from the oil and immediately transfer them to the cooled honey syrup. Let them soak for 1-2 minutes, ensuring they are fully coated.
Remove the syrup-soaked fritters and place them on a serving platter. Sprinkle generously with toasted sesame seeds before serving warm or at room temperature.
